Scarborough Black Label Shiraz 2010

Sticking with the traditional red varieties of the Hunter Valley, Scarborough Shiraz is a classic example of this medium bodied, elegant style that is complex, savoury and earthy but with a bright fruit profile. It is a smooth mix of tannins, fruit and vital acids that keep it fresh and ensure it will cellar favourably in the long term. Drink with duck or lamb.

A normal season with good yields and lovely whites and reds. There was some rain which generally helped maintain canopies and fruit. Produced high quality whites (fine acids) and more buxom reds. All in all 2010 wines are beautifully balanced.

Scarborough Shiraz is sourced from mature local vineyards where the exuberance of young vines has been replaced by steady flavour ripening. The fruit is then destemmed and crushed before it is chilled into a tank where it is allowed to cold soak for 4-7 days before it becomes inoculated with our cho-sen strain of yeast. On the skins fermentation lasts up to 7 days with the wine being pumped over the skins 2 to 3 times a day to extract flavour tannins and colours. Once fermentation has finished it is pressed out and allowed to settle in stainless steel. The settled wine is then transfered to new and older French oak for 18 month maturation after which the wine is then bottled.

Dark red with ruby highlights. The nose is of black cherry and plum fruits with spicy cinnamon and clove notes and a hint of tar. On the palate it is classic Hunter savoury Shiraz characters with a generous fruit palate restrained by dusty tannins that will soften with age.
