The fruit for this wine, the Bimbadgen Shiraz Viognier 2011 was grown on Bimbadgen’s home vineyard in the Hunter Valley situated on McDonalds Road, Pokolbin.

The Shiraz and Viognier grapes were harvested together then crushed and destemmed into an 8 tonne fermenter. Left to cold soak for 2 days to assist in colour extraction before co-fermentation with a selected yeast strain. The ferment was mixed twice daily with pulses of air too gently extract tannins before being pressed off skins and transferred to French oak barrels for malo-lactic fermentation. Maturation in oak barrels lasted 12 months before blending and bottling.

Dark purple with red tints, the nose shows dark cherries and cedar with some lifted violet perfume. Pretty plum fruit flavours dominate the palate which is balanced with some savoury tobacco leaf flavours and sweet spices. Ripe fruit tannins and many fine oak tannins assist in the soft structure of this wine.
